About:

Join olive oil sommelier and Sarah & Olive founder Sarah Merrigan for a guided introduction
to the world of exceptional extra virgin olive oil.
Through structured tasting, we will explore what defines true extra virgin olive oil, how to
recognise quality, and what distinguishes great oils from those that fall short. You will learn
about the role of polyphenols, and how factors such as olive variety, terroir, harvest timing
and milling influence flavour.
The session includes practical guidance on professional tasting technique, identifying both
positive attributes and common defects, pairing olive oil with food, and how best to store and
use oil to preserve freshness and complexity.
Suitable for curious cooks and anyone interested in understanding olive oil in greater depth.
