Founder, Kombucha na Dálaigh
Marianne O’Donnell is the founder of Kombucha na Dálaigh, a small-batch kombucha brewery based in the Donegal Gaeltach . A Certified Nutrition Coach with over 25 years of experience in food, nutrition, and education, she is passionate about gut health, fermentation, and the power of real food to support wellbeing.
What began as a home-brewing experiment during the pandemic has grown into an award-winning kombucha brand, brewing living, unpasteurised kombucha with organic teas, whole fruit, and botanicals.
Kombucha na Dálaigh is now stocked in Avoca, Ballymaloe House and Chapter One. Marianne has spoken in the Drinks Theatre at the Ballymaloe Festival of Food for the past three years and runs workshops sharing her love of fermentation and low- and no-alcohol drinks.
