Named ‘Gut Health Specialist of the Year’ in 2018 and on the ‘Ones to Watch List’ in 2024, Karen is forging a food revolution to help rectify our cost of health crisis through her company The Happy Tummy Co. Writing for The Evening Standard, Editor Laura Craik wrote after spending days with Karen that “Her zeal would put Jesus to shame!” Customers of the HTCo began calling her signature ferment ‘the magic poo bread’ and from there Karen has built a customer base of 12,000 people throughout Ireland now purchasing this product and others to alleviate issues causing them pain. Karen has saved people from a life of medication and undergoing bowel removals through this one simple bread swap. Based on the West Coast of Ireland, people come from as far as The Falkland Islands and New Zealand to learn Karen’s approach to health through the food we eat.
