JR Ryall is the award winning head pastry chef at the historic Ballymaloe House Hotel in County Cork, Ireland. Originally trained directly under culinary legend Myrtle Allen, JR has spent over two decades preserving and innovating classic Irish pastry traditions. He is the custodian of Ballymaloe’s legendary dessert trolley, which won the prestigious Trolley of the Year award at the World Restaurant Awards in Paris.An alumnus of Trinity College Dublin, JR is known for international pastry and dessert pop-ups. In 2022, he published his highly acclaimed debut cookbook, Ballymaloe Desserts (Phaidon), and was named Pastry Chef of the Year at the Food and Wine Awards.
