Ed Wilson is a chef and restaurateur based in London. He runs two restaurants, Brawn and Sargasso with his wife and business partner, Josie Stead. Ed’s love of sourcing the best ingredients has forged strong relationships with growers, farmers and wine makers allowing him to culturally link his food to the extensive travels of Europe that he has done and his menus reflect those journeys. With over 25 years of restaurant experience in London alone, Ed has forged a dynamic, creative and relevant approach to hospitality. Ed is also a founder of two festivals both in their 7th and 8th year, Ricci is hosted in Catania, Sicily and Brawnswood at We Out Here Festival in Dorset each summer.
