Aishling Moore is a Cork-born chef and the owner of Goldie, the award-winning sustainable seafood restaurant on Oliver Plunkett Street. A graduate of MTU and former head chef at Elbow Lane Smokehouse & Brewery, she opened Goldie at just 24. Known for her innovative “whole catch” approach and deep respect for Irish seafood, Aishling was named Best Young Chef at the Food & Wine Awards in 2023, recognised for her leadership, sustainability ethos and exceptional talent with fish.
