About:

Ailbhe Gerrard is a farmer, beekeeper, educator and creative producer at Brookfield Farm, an award-winning mixed organic farm overlooking Lough Derg in County Tipperary. The farm includes sheep managed organically, bees, meadows and broadleaf trees, alongside crop trials with unusual varieties of grains and legumes, including wheat, rye and beans, with a view to selling directly to chefs, bakeries and local food networks.

Ailbhe is the founder of Field Exchange, a Creative Ireland-supported programme bringing farmers, artists, scientists, policymakers and communities together to explore climate action, biodiversity, agroecology and rural resilience. She is a Nuffield Agricultural Scholar, a Farming for Nature Ambassador, and is currently working on a forthcoming book on Brookfield Farm and Field Exchange.
