Peas are one of my all time favourite vegetables. I always have a bag of frozen peas in the freezer. They're so handy to add to any dinner. In these easy pancakes the peas are sweet and the feta salty and the mint just gives a nice fresh flavour. These are super in the lunchbox too! Swap feta for cheddar cheese if your kids prefer it.
Sieve the flour into a bowl. Measure the milk into a jug, crack in the eggs and whisk well, then pour into the bowl of flour and stir to make a batter.
Mash the peas almost to a paste, then add them to the bowl along with the crumbled feat chopped mint, add a small pinch of salt and pepper.
Warm a large frying pan and lightly coat with oil. Spoon on 2 tablespoons of the mix per pancake. Wait for the bubbles to appear - it will take a few minutes - then flip and cook for another minute.
Transfer to a wire rack to cool. Eat warm or cold.
