Carrot Wraps

Ingredients: 

My carrot wraps were a recent viral hit with over 3 million views on my channel - I love when people get excited about easy veggies recipes. They make a great alternative to bread and are really fun to make with the kids too. 
  • 2 carrots grated, 200g
  • 2 large eggs
  • 100g grated mix cheddar and mozzarella 
  • Salt and pepper to taste
  • Serve with: hummus, lettuce, tomato, cucumber

Directions: 

Preheat the oven 180ºc fan.

Line a swiss roll tin with non-stick parchment paper, mine is 32 x 23 x 2.5cm. Lightly oil the paper.

Mix all the ingredients together in a bowl. Pour onto the tray. Smooth and spread evenly with a rubber spatula.

Bake for 25 minutes approximately.

Cool for a few minutes, then peel off the paper.

Fill with your favourite sandwich filling, like hummus, salad, tomato,  roll cut and enjoy.
